Much like the traditional homemade fermented glutinous rice dessert (commonly known as jiuniang or laozao), fermented rice has a sweet and slightly pungent taste with a warm nature. It is reputed to warm Yang, open meridians, fortify the spleen, stimulate appetite, aid digestion, dispel cold, and support those with underlying deficiencies. As recorded in the Ben Cao Jing Shu Lun, when the spleen and lung are strengthened, the body naturally warms, nurturing Qi and vitality. Notably, the fermented rice used here contains no alcohol yet retains all the beneficial properties of fermentation.
